Arroz de Camarones
Ingredients
2 lbs raw shrimp shells on, deveined
1 tsp cumin
4 garlic cloves minced
2 tbs oil sunflower, avocado, etc
2 cups uncooked rice
3 tbs butter
1 red onion diced
1 bell pepper diced
2 tomatoes peeled and seeded, diced
3 tbs parsley finely chopped, plus more to garnish
2 tbs Peruvian Gold
½ cup of white wine
Salt and pepper
Instructions
1. Marinate the shrimp with salt, pepper, 1 tsp of cumin, and the crushed garlic.
2. Bring water to boil in a large pot, add the shrimp and boil for about 2 minutes.
3. Remove the shrimp from the water and reserve 2 ½ cups of the water they cooked in to
prepare the rice.
4. Remove the shells and tails from the shrimp; leave the tails on a few of the shrimp that
will be used as a garnish. Chop about half of the shrimp in half and leave the other half
whole.
5. Heat the oil in a large saucepan or pot, add the minced garlic, cook for about 2-3
minutes on medium heat.
6. Add the rice to the garlic and oil, mix well until the rice is coated with oil.
7. Add the 2 ½ cups of water that was used to boil the shrimp. Bring to boil and reduce
heat to low.
8. In the meantime, melt the butter over medium heat in a large sauté pan; add the onions,
peppers, tomatoes, parsley, Peruvian Gold, salt, and pepper.
9. Cook for about 10 minutes, stirring often.
10. Add the white wine to the vegetable mix and continue cooking for another 5 minutes,
until the onions and peppers are tender.
11. Mix in the sautéed vegetables and chopped shrimp with the rice, which should still be
cooking, and cook on low heat until the rice is tender.
12. Add the remaining shrimp during the last minutes and mix well.
13. Taste and add salt and pepper if needed.
14. Sprinkle with chopped parsley and garnish with shrimp with tails on.
Morrocan Meatballs and Fail Proof Tzatziki
Moroccan Meatballs with Fail Proof Tzatziki Sauce
These grilled or baked meatballs are laced with Good Karma spices and
served with a cooling yogurt sauce.
Servings: 8 meatballs, 4 servings

INGREDIENTS
MEATBALLS
1 large egg
3 garlic cloves, minced
¼ cup fresh flat parsley
2 tablespoons Legacy Spice Shop -Good Karma
1-1/4 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1-1/4 pounds 85% lean ground beef, lamb or Meat Substitute
1/3 cup panko
Vegetable oil, for grilling
Optional-Fresh hot chili pepper diced-
FAIL PROOF TZATIKI SAUCE
1/2 English cucumber, peeled, halved lengthwise, seeded and grated
1 cup plain low-fat or whole milk Greek yogurt (do not use non-fat)
2 tablespoons fresh lemon juice, from one lemon
1 tablespoon chopped fresh dill-if you are adding spice to this recipe mint is
another option.
1/4 teaspoon Kosher salt
1/4 teaspoon freshly ground black pepper
INSTRUCTIONS
FOR THE MEATBALLS
1. Preheat the oven to 350 degrees.
2. Mix together the egg, garlic, Good Karma spices and salt and pepper in a
medium bowl. Add the ground meat and panko and mix with your hands until
well combined.
3. Using a 1/3 cup measure, form 8 round-shaped meatballs or 16 for smaller
meatballs.
4. Bake in the preheated oven until browned, about 30 minutes. You can also
Pan Fry until meatballs are browned on all side and cooked through about 15
minutes.
FOR THE YOGURT SAUCE
1. Drain the Yogurt and the Cucumber in a strainer for about 30 min to remove
excess liquid. Combine all of the ingredients in a small bowl and mix well.
Refrigerate until ready to serve.
Serving Suggestions: you can serve this dish as an appetizer with
Meatballs on a serving stick with yogurt sauce or you can stuff the
meatballs in pita bread with lettuce tomato and red onion with a drizzle of
tzatziki sauce.

1 Avocado

INSTRUCTIONS
In a small bowl, combine avocado, lemon juice, salt, and pepper. Gently
mash with the back of a fork.
Top toasted bread with mashed avocado mixture. Add optional Toppings.
Drizzle with olive oil and sprinkle over desired toppings.

1 can of chickpeas rinsed well

1 Tablespoon of Lemon Juice
1 Tablespoon EVOO
1 clove of Garlic Minced
Optional Ingredients
o Green/Red/Yellow Peppers
o Red Onion
o Chopped carrots
o Parsley
o Tomato
o Persian Cucumbers
o Zucchini Chopped
INSTRUCTIONS
In a small bowl, combine all ingredients mix well. Let the mixture and
allow the ingredients to become friendly with each other. Add Parsley
when ready to serve for additional freshness and you may need to add
